Trout fishing is available year-round in McCurtain County (in Broken Bow, Oklahoma) and is one of the most popular in the park. You'll find mountain lakes surrounded by forests and rivers of national execution. The area offers outstanding fly fishing (if you are a cigar) and excellent fishing along the river with a spinning rod (I suggest the use of artificial salmon eggs or spinners if you're not a fly fisherman). McCurtain County is the perfect destination for your weekend fishing. For example, Lower Mountain Fork River offers 14 miles of trout habitat. Ingredients

* 4 trout – 12-14 oz (350-400g) headed and gutted (if preferred)
* Black pepper
* Butter
* Lemon juice
* Chopped parsley

Preparation: Preheat oven to 350 degrees. Wash and dry fish. Cooking oil and was in the fish. Ingredients

* 3 / 4 cup Italian bread crumbs or simply Vigo style bread crumbs
* 2 tablespoons garlic powder
* 1 / 2 cup Romano cheese
* 1 / 3 cup lemon juice (or more if necessary)
* 4 tbsp chopped fresh parsley
* 4 trout fillets (about 8 ounces each), rinsed, drained
* Parchment

Preparation: Preheat oven to 375 degrees. In a large bowl, mix bread crumbs, garlic powder, cheese and lemon juice Romano enough to form a dough.

Cut a piece of parchment paper large enough for trout to get loose. Place a fillet in parchment paper. Spread mixture evenly on top of the network. Sprinkle with 1 tablespoon parsley. Fold the parchment to enclose the trout loosely. Tuck ends below, creating a sealed bag. Repeat with remaining fillets. Place on a baking tray and bake for 10-12 minutes or until center of fish is opaque. Serve parchment in his pocket.
